Not surprisingly, if you are a kid chances are you are more than likely to stay away from those green leafy vegetables or any vegetable that doesn't taste as good as their brighter coloured relative i.e tomatoes, capsicums.
My nephew used to dread the thought of eating vegetables every time his mom cooks some broccoli or spinach. No matter how delicious a dish tastes, he would not eat any of them because according to him "it tastes disgusting!"
This is when my sister in law decided that "enough is enough.." and so she went on mission to discover other interesting ways to prepare vegetables into more palatable dishes for her son.
One of her favourite methods of getting vegetables into his diet is to prepare some fresh vegetable juice. Check out some great recipes below

Vegetable Juice Recipe #1 - The Green Monster Juice Recipe
This recipe is quite literally a combination of a whole bunch of vegetables. It is truly a monster for those who dread eating them separately. Thankfully, this surprisingly delicious vegetable juice recipe is not only refreshingly good but is a powerhouse of antioxidants and re-energizes you.
Ingredients
2 cups wheatgrass
2 celery stalk with leaves
2 handful spinach leaves
2 kale leaves
1 lemon, peeled.
Instructions: Prepare wheatgrass shot in a wheatgrass juicer or blender. Juice all the remaining ingredients in the recipe. Stir and serve immediately. This recipe gives you enough juice for 2 people.
Nutritional Content
A concoction prepared exactly to the ingredients mentioned above will give you lots of antioxidants to detoxify your system and the energy to sustain you throughout the day. Kale and spinach are big contributors towards this. Wheatgrass gives you a boost of energy throughout the day and strenghtens your immune system. The lemon gives the whole preparation a lemon zesty flavour to the whole recipe. You can even choose to use orange instead of lemon if you want to add something sweeter to this recipe.
Vegetable Juice Recipe #2 - Get A Big Dose of Cruciferous Vegetables!
Don't know what cruciferous vegetables are? Broccoli is one example and cauliflowers are another example.
Of all the vegetables that can be juiced, broccoli is the most well known for its anti-cancer properties. Two chemicals called glucoraphanin and indole-3-carbinol have been proven to reduce breast, cervical and prostate cancer cells. It is also rich in antioxidants and used in various juicing recipes including this one that I will mention soon to boost energy. The high levels of calcium is also good for bone health while other vitamins lik Vitamin A,C, E and K can be found in broccoli.
But I bet, your kid wouldn't want to hear that either. He/ She would rather have a delicious colourful juice rather than hear these health benefits that he might not even understand.
Ingredients
1-2 cups of cauliflower, cut to smaller pieces
2 beet green leaves
5-6 medium broccoli spears
Instructions: Prepare this recipe in the order listed and juice until you get a nice mush. You can opt to add orange or lemon in here for more flavour. This recipe might not be your kid's favourite but this is certainly another way to get them to have them in their diet.
Vegetable Juice Recipe #3 - The Pepper Warrior!
In this juice recipe, we will incorporate three different types of belle pepper. Hence, the name the pepper warrior!
We will also incorporate other potent antioxidants from other types of vegetables that you will see in the ingredients below.
Ingredients
1/2 cucumber, sliced
1/2 green bell pepper
1/2 red bell pepper
1/2 yellow bell pepper
1 celery stalk with leaves
1 teaspoon of turmeric
Instructions Gather all the ingredients above and juice them to your heart's content! Stir the turmeric and serve.
If you aren't sure which ingredient is a potent anti-inflammatory of antioxidant, it is the turmeric. Turmeric is not used frequently in Western dishes but it is very popular in Indian foods. Turmeric contains curcumin which is an effective anti-inflammatory agent. It is also responsible for giving the turmeric its yellow appearance.
The antioxidants found in the variety of bell peppers thanks to its varied colours also makes this juice recipe stay strong and healthy. Many people claim that this juice is great against osteoarthritis. Osteoarthritis is a condition whereby the joints becomed inflammed and tender due to years of wear and tear.
This juice preparation is enough for 1-2 cups.
